Sicilian ricotta, dark chocolate and orange cake
Serve with plain yoghurt and citrus zest.

This recipe is a dessert and should be enjoyed in moderation following a meal from the Hearty collection.
Ingredients:
- Four eggs, separated
- Pinch of salt
- ¾ cup of white sugar
- 400g of fresh ricotta, sifted
- 1/4 cup of corn flour, sifted
- One orange, squeezed and zested
- 50g of dark chocolate, flaked
- Icing sugar, to dust
Method:
- Preheat oven to 200⁰C. Prepare a 20cm springform pan/round baking dish by lining with parchment paper, leaving edges a little higher to ease the unmolding of the baked cake.
- Whip egg whites and salt until stiff peaks form and set aside.
- Use an electric mixer to whisk egg yolks and sugar together until creamy, then add sifted ricotta, corn starch, orange zest and two tablespoons of orange juice. Stir through chocolate flakes.
- Gently fold whipped egg whites into the ricotta mixture until evenly combined.
- Pour mixture into prepared baking dish and bake for 40 minutes. If the cake gets too dark too quickly, loosely cover with foil.
- Leave the cake to cool in the pan to make sure it sets properly. Dust with icing sugar when cooled and ready to serve.
- Serve with plain yoghurt and citrus zest.
