Hearty bean soup to boost kids immunity

Serve this hearty and healthy bean soup with steamed bread, or rice of choice.

This immunity boosting soup is made with dried butter beans, or red kidney beans, button mushrooms and extra lean mince making for a filling and comforting meal.

Ingredients: 

  • One and a half cups of dried butter beans or red kidney beans
  • Six teabags of Tea4Kidz Rooibos tea (variant of your choice)
  • Two tablespoons of Canola oil
  • One pnion, finely chopped
  • One tablespoon of curry powder
  • One tablespoon of tomato puree
  • One tablespoon of paprika
  • One teaspoon of salt
  • One punnet of button mushrooms
  • One yellow pepper, finely chopped
  • Two red chillies (optional)
  • 250g of lean or extra lean mince (optional)

Method: 

  • Brew Tea4Kidz Rooibos tea bags in six cups of hot water and allow to cool.
  • Once cooled, add the beans and leave to soak overnight.
  • In a saucepan, bring the beans in tea liquid to the boil and allow to simmer until soft, then set aside.
  • Sauté onions in the oil until golden brown, then add peppers and mushrooms and sauté until soft. Add chilli (optional).
  • Add the lean mince and cook until browned. (If you are skipping adding mince, then skip this step).
  • Add curry powder, tomato paste, cooked beans and seasoning.
  • Turn down the heat and simmer slowly until the liquid thickens.
  • Serve this hearty and healthy bean soup with steamed bread, or rice of choice.
