Scrumptious oat cookies

Substitute three tablespoons of of the flour with cocoa for a chocolate flavour.

These yummy cookies are high in fibre! A perfect treat for any time of the day.

Serving size: Makes 40 small cookies

Ingredients: 

  • ¼ cup of peanut butter
  • ¼ cup of butter
  • ¾ cup of sugar
  • Three eggs, beaten
  • Three tablespoons of low-fat milk
  • Two cups of uncooked oats
  • One cup of whole-wheat flour
  • Half a teaspoon of bicarbonate of soda
  • Half a cup of raisins
  • Half a tablespoon of ground cinnamon or mixed spice

Method: 

  • Preheat oven to 180°C. Line a large baking tray with baking paper.
  • Beat peanut butter and butter until well blended. Add sugar and mix well. Beat in eggs one at a time. Stir in milk.
  • Mix oats, flour, bicarb, raisins and cinnamon. Stir into sugar mixture until well blended.
  • Allow the mixture to stand for a few minutes. Roll into small balls and place on the baking tray. Press down with a fork or spoon.
  • Bake for 10 to 15 minutes or until light golden brown. Allow to cool. Store in an airtight container and serve as a teatime treat.
