Scrumptious oat cookies
Substitute three tablespoons of of the flour with cocoa for a chocolate flavour.

These yummy cookies are high in fibre! A perfect treat for any time of the day.
Serving size: Makes 40 small cookies
Ingredients:
- ¼ cup of peanut butter
- ¼ cup of butter
- ¾ cup of sugar
- Three eggs, beaten
- Three tablespoons of low-fat milk
- Two cups of uncooked oats
- One cup of whole-wheat flour
- Half a teaspoon of bicarbonate of soda
- Half a cup of raisins
- Half a tablespoon of ground cinnamon or mixed spice
Method:
- Preheat oven to 180°C. Line a large baking tray with baking paper.
- Beat peanut butter and butter until well blended. Add sugar and mix well. Beat in eggs one at a time. Stir in milk.
- Mix oats, flour, bicarb, raisins and cinnamon. Stir into sugar mixture until well blended.
- Allow the mixture to stand for a few minutes. Roll into small balls and place on the baking tray. Press down with a fork or spoon.
- Bake for 10 to 15 minutes or until light golden brown. Allow to cool. Store in an airtight container and serve as a teatime treat.
