Oven-roasted tomatoes on homemade flat bread
Serve with pita breads and hummus. Optional: add extra tahini when serving.

You can eat well even when there is no meat!
Ingredients:Â
- Four cups (600g) of cherry tomatoes
- Three tablespoons of olive oil
- One tablespoon of whole cumin seeds
- Three tablespoons of brown sugar
- Two cloves of garlic, finely chopped
- Three sprigs of thyme, finely chopped
- One tablespoon of dried origanum
- Grated zest of one lemon
- Salt and freshly ground black pepper
- Two cups (500ml) of homemade, creamed cottage cheese
- 1/4 cup of tahini paste
- Half a cup of water
- Three tablespoons of white sesame seeds
- 10 pita breads
- One cup of hummus, to serve
Method:Â
- Preheat oven to 180°C. Place tomatoes on an oven roasting tray and sprinkle with olive oil, cumin, sugar, garlic, thyme, origanum and lemon zest. Season well with salt and pepper.
- Place in oven and roast for 15 to 20 minutes or until tomatoes burst open and start to caramelise.
- Mix cottage cheese, tahini and water together to smooth mixture.
- Heat frying pan to hot over high heat. Add sesame seeds and toast for 10 to 15 seconds.
- Toast pita breads according to instructions on packet.
- Spoon yoghurt onto serving plate, top with tomatoes and sprinkle toasted sesame seeds over.
- Serve with pita breads and hummus. Optional: add extra tahini when serving.
