Ingredients:Â
- Three Granny Smith apples, peeled and chopped
- Two tablespoons of lemon juice and zest
- 330g of castor sugar
- 500g of frozen mixed berries
- Two eggs
- Half a cup of Laager Wild Cherry and Cranberry Rooibos
- One teaspoon of vanilla
- One teaspoon of baking powder
- Icing sugar, to dust
- Thick cream mixed with
- One teaspoon of ground cinnamon, to serve
Method:Â
- Preheat oven to 160 degrees.
- Place apple, lemon juice and one cup of sugar, Laager Wild Cherry and Cranberry Rooibos tea in the pan over low heat.
- Stir for three minutes till sugar dissolves.
- Cool then stir through berries.
- Transfer to a 1, 25 litre baking dish. Set aside.
- Place flour, baking powder and remaining sugar in a bowl.
- Pour egg mix into dry ingredients. Whisk well to form smooth batter.
- Pour over the fruit, then bake for 30 to 35 minutes until golden and firm to touch.
- Dust with icing sugar.
- Serve with ice cream!
